I’ll Be Your Honeysuckle

Boozy, Floral & Smooth- lifted with a wine air garnish

Spring is in the air! Especially when that air is made of wine. This cocktail has it all! It’s a boozy stirred cocktail perfect for White Negroni fans.  Cinnamon Spiced tequila, Homemade Honeysuckle Liqueur, Yellow Chartreuse and an air garnish made with Chenin Blanc wine. 

The cinnamon tequila blends beautifully with floral honeysuckle and the chartreuse lends the perfect herbal note to this drink. The wine air adds brightness and echoes back those floral aromas and honeyed flavor profile.

You’ll need the following equipment:

Ingredients:

  • Honeysuckle Tea

  • Chrysanthemum Tea

  • Cinnamon

  • Honey (Clover or other mild honey)

  • Vodka

  • Reposado or Anejo Tequila

  • Yellow Chartreuse (can sub Benedictine)

Dried Honeysuckle Flowers

Chrysanthemum Tea

Measure out 2 grams of honeysuckle tea (dried)

If using fresh honeysuckle blossoms, use 1 cup of flowers

Measure out 0.5g

Chrysanthemum Tea

Chrysanthemum is pretty powerful- Be sure to only add a small amount as to not overpower the honeysuckle!

Make te infusion

Add both teas to 1 cup of vodka. Let stand a minimum of 6 hours.

We’re first going to be making our vodka and tea infusion with honeysuckle tea, chrysanthemum tea and some locally sourced honey. The honeysuckle tea is going to give it that beautiful perfumed aroma. These are basically just dried honeysuckle flowers. Dried honeysuckle will be a bit more grassy and slightly less floral, which is why I am adding a bit of chrysanthemum tea.

The chrysanthemum tea is going to give us a sweet, earthy taste to add some more floral notes along with the honeysuckle. I won’t be using too much as it can be quite powerful, and I do not want to overwhelm the honeysuckle flavor. We’ll be adding all three of these ingredients to a neutral spirit to infuse.

I’m going to measure out about a half  a gram of chrysanthemum tea and add it to our mixing container. Then I’ll measure out about 2 grams of the honeysuckle tea and add that as well. I’m going to add 1 cup of vodka to the teas. I’m not adding the honey yet, as I want to gauge the sweetness first. Give this a stir and let it sit for about (time to let it sit before tasting to see how much honey you’ll add). If you are using fresh honeysuckle, I would suggest using equal parts by volume (1 cup) and letting it infuse for overnight. After it has infused I will strain out the tea and taste for sweetness.

You can add less or more honey here depending on your preference but I want mine to have enough sweetness to hold up against the cinnamon tequila we’ll be making, as well as that wine air garnish.

After giving this a stir I’m going to bottle it up for when we’ll make our cocktail. The shelf life for this should be (time) but always use your best judgement. This infusion would also be great in a bees knees cocktail.

Cinnamon Tequila

I’m going to be cracking one small stick of cinnamon and infusing it with 4 oz of tequila. I’ll let this infuse for 4 hours. but you can let it infuse longer depending on how intense you want you flavors to be.

I love using tequila in cocktails. Especially aged tequila. The aging process adds some lovely vanilla and spice note which is why it works great with cinnamon. This combination is going to help ground our sweetness with a little bit of spice and help bridge those cozy winter flavors into spring. After the infusion process, simply strain out and bottle. This cinnamon tequila would also work great in a cranberry margarita.

Chenin Blanc is a great choice for this wine air- It echoes back the floral and honeyed notes of the honeysuckle liqueur

I will measure out 150ml of wine to make the cocktail foam.

I am measuring out .9g of soy lecithin powder- do not use liquid for this process- it will not work!

use 0.4% to 0.6% soy lecithin powder by weight with your liquid of choice. If you want really big bubbles, you will want to add xanthan gum to thicken. more viscosity= bigger bubbles.

Use an Immersion blender to blend the wine and soy lecithin powder together for at least 1 minute

Once the ingredients have been fully blended together, raise part of the blender blade above the liquid to create more bubbles

Let stand for 1 minute

Letting the air stand for 1 full minute will ensure the air wont fizzle out too quickly. You want to only add the bubbles to the top of the cocktail without residual liquid from making the foam.

Make the cocktail:

  • 1.5 oz Cinnamon infused Reposado Tequila

  • 1 oz Honeysuckle Liqueur

  • .5 oz Yellow Chartreuse

  • Lemon Twist

Add all ingredients to a mixing glass with ice- including the lemon twist. Stir for 30 seconds and pout over a large ice cube in a rocks glass.

Garnish: Top with wine air
