You’ll need the following equipment:

Ingredients:

  • Juniper Simple Syrup

  • Lemon Juice

  • Mint

  • Peas

  • Seedlip Garden 108

  • Greek Yogurt

One of the more popular New Years resolutions is to give up alcohol, at least for the month of January. 

Whether you’re sober, sober curious, or just taking a short break, there are lots of amazing things happening in the zero proof cocktail world. 

There are so many new products on the market to create excellent balanced drinks without the buzz. Usually getting a mocktail at a bar was just a bunch of juices mixed together, or something just loaded with sugar and no complexity whatsoever.

In this recipe I will be using Seedlip Garden 108 as the base of the cocktail. 

The Seedlip Garden spirit has a really great vegetal quality that I really wanted to lean in to. For this recipe I am using peas, lemon, yogurt, mint, juniper syrup along with the Seedlip Garden. 

To start, I’m going to make the juniper syrup. I am adding 20 juniper berries, 1/4 cup water and 1/4 cup sugar to a saucepan. I’ll heat the syrup over low heat until it begins to boil, I let it boil for 2 minutes before turning off the heat and crushing the juniper berries with a muddler. Once the syrup has cooled a little bit, I’ll strain out the juniper berries. 

 Next, I will juice some peas. I don’t have a juicer, so I’ll just blend these peas on high with a little bit of water. I used a cup of peas and around a quarter cup of water to yield about 3 ounces of Pea juice. I probably could have gotten more, but since peas are starchy, I didn’t want to press out the liquid. That would lead to a sediment forming at the bottom of the drink, giving the drink a gritty texture.

Next I will juice a lemon. I’m not going to strain the juice, as I will be double straining the cocktail. 

Now we are ready to make the cocktail. 

First, I’m going to add four mint leaves to my shaker tin, after ginning them a little slap- this helps to release the oils from the mint. Next I’ll add one ounce of the pea juice to the shaker, followed by a half ounce of the juniper syrup.

Then I’ll add a half ounce of lemon juice, two ounces of Seedilp Garden, and two bar spoons of greek yogurt. I like to use the full fat variety in cocktails, it tends to hold up better in cocktails, though it will separate a bit if it sits too long. 

Now I’ll shake it all together before double straining into a coupe and placing some mint on top for garnish.  

This drink is bound to please anyone, whether they drink alcohol or not. The mint and the peas blend really nicely with the Seedlip Garden spirit and juniper syrup, while the lemon and yogurt really round it out. I hope you give it a try!


Ingredients:

  • Mint Leaves

  • 1 oz Pea Juice

  • 1/2 oz Juniper Syrup

  • 1/2 oz Lemon Juice

  • 2 oz Seedlip Garden 108 non alcoholic spirit

  • 2 bar spoons of full fat Greek yogurt

Method:

  1. Shake all ingredients with ice and double strain into a coupe.

  2. Garnish with a mint leaf.
